Sound knowledge of what they are serving including where ingredients come from and how the are prepared
An understanding of the contributing factors of creating an espresso to be able to manipulate chemistry to consistently extract perfection.
An understanding of textured milk and how to pour it.
An understanding how to clean and maintain equipment, including a thorough understanding of the coffee machine, grinder and barista tools so as to avoid misuse and damage.
