COMPETENCIES: Badge owner demonstrates fundamental competence in the following skill areas: menu conceptualization and concept proposals; unique techniques; pros and cons of the cuisine; upsets and upgrades; and beverage pairing.

COURSEWORK: Badge owners completed a project where they are to create a menu based on the learning materials for each cuisine presented, under specific scenarios. The 10 cuisines covered will include: French, Italian, Chinese, Southeast Asian, Fusion, Gastro-pub, Central American, Regional American, Indian, and Spanish.
