Earners of the EIT Trades Academy Bakery NCEA Level 3 badge have completed a basic supervised bakery skills in cakes and pastry course through either Hawkes Bay or Tairāwhiti School’s Trades Academy at EIT (Eastern Institute of Technology). Learners are able to bake and finish basic artisan bread, pastries, cookies and cakes. They have demonstrated basic skills within a commercial bakery environment, made a range of products and run two Trades Academy Shop Days with products for sale.

In this government funded Trades Academy Secondary School course the learner gained skills in: Baking breads and pastries; Cookies and cakes; Product presentation; Working safely. Students attend classes once a week for 29 weeks.

Learners have been assessed and passed a range of items including: Sponge, batch of sweet muffins, batch of savoury muffins, batch of sweet scones, batch of savoury scones; and one of – chocolate cake, banana cake, Madeira cake, carrot cake; Puff pastry, sweet short pastry, savoury short pastry.
